Exhibition of Nipa palm vinegar powder and tablet on the welcome of Her Royal Highness Princess Maha Chakri Sirindhorn

          On February 17th, 2020, the prototype of health supplement products “Nipa palm vinegar powder and tablet” were exhibited by Asst. Prof. Dr. Wiyada Kwanhian, Department of Medical Technology, School of Allied Health Sciences, Walailak University with researchers from Walailak University in order to welcome Her Royal Highness Princess Maha Chakri Sirindhorn at coordinating center of Pak Phanang River Basin Development due to the Royal initiative, Nakhon Si Thammarat. This research product was granted from several funding agencies including Agricultural Research Development Agency (Public Organization), Thailand Research Fund, and Office of the Higher Education Commission.

          From the research finding, it was found that Nipa palm vinegar from Khanab Nak, Pak Phanang was marinated vinegar that suitable for functional food. Antioxidant, reduction of lipid digestion and absorption, anti-hyperglycemia, anti-hypertension, immunomodulation, and anti-bacteria were also observed. These effects were potent as similar as Apple cider vinegar and Balsamic vinegar. Moreover, when the Nipa palm vinegar powder was produced by spray dry technology, the activity was still remain. Therefore, this product should be studied and developed for commercial in the future that support agriculturists and upgrade the local product to be the high value.
